Value Added Products is designed to provide students with the basic knowledge of food processing in order to enhance their appreciation for the benefits and opportunities available to create or capture a larger share of the food dollar. Processed and value added products fetch a higher price, can be stored for a longer time and need less space. This course will give students a chance to apply theoretical concepts as they work with the processing unit, at the University of Belize, to improve the quality of market offerings while increasing the performance of the product at sale points. It introduces students to different value added and food processing techniques, and principles of food safety, food quality and costing.
